This is what we do and we do it well.  Whether you want our specialty, slow smoked central Texas style brisket with burnt ends that melt in your mouth, or Carolina style pulled pork, St. Louis style ribs, or Eastern Maryland smoked chicken, we'll satisfy any meat lover's palate...guaranteed!  We've been doing this a little while and have perfected our techniques and recipes to deliver competition quality smoked meat to you every time!  

Central Texas Style Brisket - Seasoned with Dizzy Pig's flagship Dizzy Dust rub and slow smoked with pecan wood.

Delicious sides

We don't take our sides lightly.  Our Mac 'n Cheese is legendary 'round these parts and our Hog Apple Baked Beans...well, you've just got to try 'em to see.  They're a take on a popular recipe you can find online, but we've tweaked and perfected them to be a unique staple on our menu that has literally created a cult following among our customers.  Our slaw is tangy with that Carolina vinegar influence.  The potato salad is just like momma's summertime masterpiece.  Our roasted potatoes and roasted seasonal veggies ramp up the menu and have a few southern secrets that warm the soul!

Moink Balls - Bacon wrapped Italian Meatballs, seasoned and smoked to until done, then we sauce then and put the back on for a few minutes for the sauce to set up on the moink balls!  Also popular as an appetizer.

Scotch Eggs - Hard boiled eggs, peeled and covered in breakfast sausage, then seasoned and smoked until done.  We quarter them for service.  Minimum order is 6.
